Colombian Coffee has a mild acidity & a robust caramel sweetness, often with a nut undertone, similar to higher-quality Peruvian coffees. They have the most distinct coffee taste in North America, that of sweet & medium-bodied.

It is possible to make strong Colombian coffee in comparison to non-Colombian coffee types. The strength of the coffee is influenced by the processing, roasting & brewing methods. In a little pot, bring water and panela to a boil. Panela is a product that is made from sugarcane, it is sweet & brown, is marketed in blocks or grated & the flavour is like that of brown sugar. Reduce heat to low and cook for 30 min, stir occationally to melt panela.

The caffeine concentration of Colombian coffee is similar to that of other coffee varieties. The caffeine concentration of a dark roast coffee is slightly greater than that of a light roast coffee. The difference is small and may not be noticable. Depending on the sub-variety and degree of roasting, high-quality Colombian Arabica coffee has 30-50 milligrams per each espresso serving & up to 200 mg in an 235ml (~8-ounce) cup.

    • The hulling process

Colombian coffee beans are dried benith the sun for a few days or until the moisture amount gets to around 10%. This helps in the bean’s drying & preps it for hulling. Sumatran coffee spends far less time in the sun. Sumatran coffee is hulled with significantly higher moisture content, sometimes as high as 20%.

To remove the hulls, special wet hulling equipment is needed. The wet hulling equipment also allows the coffee beans to ferment, giving them a distinct flavor that you will not find anywhere.

Colombian coffee has a well-balanced flavour and moderate acidity. This coffee has a bit of a bite to it, but it is not overly harsh. Because of its smooth flavour, several coffee connoisseurs consider Colombian coffee to be among the greatest in the world. Sumatran coffee has a much lower acidity level. This makes it one of the greatest coffees for acid sensitivity.

Sumatran coffee has a distinctive flavour. It has earthy undertones that set it apart from the competition. You will detect hints of bell pepper, mushrooms, and even herbs when drinking Sumatran coffee. The way the coffee is processed and the land in which it is grown contribute to this flavour.
